Chef Kim at the Class Cooking and Burnt Bridge Cellars deserves the title of Chef. As a person who has had formal culinary training, I normally scoff at those who like to call themselves “Chef” when they are really just “Cook.” However, when my partner and I approached Chef Kim about our vision for our wedding, she was very warm, open, and humble. We gave her the following task: to help us weave together a wedding ceremony in a cooking class that represented our cultures and represented how our communities constitute “Us” in matrimony. Thus, not only would the food be fused but also the process of cooking would “fuse” us together too. Nonetheless, and in short, Chef Kim was very easy to collaborate with. Despite our distance (she in Vancouver, WA and we in Michigan), Chef Kim made everything happen. Not only that, she innovated our recipes so that the food tasted better and was easier to replicate (i.e., she simplified the recipes so that it was more accessible and easier). Furthermore, her assistant provided the right amount of attention and privacy. Finally, she also helped us document our wedding with a wonderful and generous photographer. Seriously, our wonderful wedding couldn’t have come into being without her help. If we were to do it again, we would continue to do it with her all over.

 

I wanted to let you know I thoroughly enjoyed the class. The menu was great and delicious. Plus I picked up some new hints. I do plan to take another class in the near future.

Hi Kim,

We want to thank you for the wonderful pasta class yesterday; like all your classes it was outstanding. Learning from your professional instruction and experience is much superior to other experiences!  From your pasta class we took away confidence and techniques that we didn't have; we dug out our pasta machine that had been sitting idle for ages and easily made fresh spaghetti this morning. We ran into too many problems making fresh pasta but after your class yesterday it was a breeze!  Fresh spaghetti pasta, basil pesto, top with fresh parmesan, a salad, and a couple of glasses of wine. We are looking forward to dinner!

What an inspiring evening. From how to hold a knife properly, making delicious Paella, drinking the best wine and running into many old friends, I cannot wait until I can take the next class. And did I happen to mention Kim is awesome. Great instructor with a wonderful warm sense of humor.

Burnt Bridge Cellars provided a wonderful Christmas event for our company - wine tasting and a dinner to die for!  The ambiance in the tasting room is wonderful and on a cold, rainy night, it was welcoming and warm.  The wines are excellent and Kim cooked a buffet dinner that was incredible.  All the dishes were unique and flavorful.  I can't wait to come back and take a cooking class from Kim.  Thank you Mark & Kim for a great night and for your hospitality.  I love to see new businesses opening and thriving in downtown Vancouver and I would highly recommend Burnt Bridge Cellars for their wine, cooking classes, or a private party!

Well, you did it again!!

Really how do you top yourself time and time again?  Holiday Dinner Party class was one of your best and will be my dinner menu for Christmas Eve. The recipes from this class will be some of my favorite "go to" dishes for years to come.  Thank you so much for your hard work all of your students are lucky to have you as our teacher! The new cooking school is a real pleasure to work in with so much room.

Tonight I did it. Cooked several of the dishes from the Greek cooking class. By the time the guests left, you'd have thought I was Alexander the Great. Of course my wife was instrumental in reminding me of all the steps you had written down that I forgot to read.

If I have never told you how much I appreciate your organized, logical, and easy to learn approach to cooking, let me say so now because I truly do! Keep up the great classes. Everyone should take one other class so they can truly appreciate your technique!

We just returned from a three week trip, with cruise, through the Mediterranean including Spain. I asked after one of your Paella classes for you to recommend some restaurants in Barcelona which you kindly did. We tried four restaurants, two on your list. Les Quintz Nits was the best by far. We had a wonderful time trying Paella in all of the restaurants but, frankly, yours the best. Even the recipe I prepared was better than any of the restaurant versions we tried. You need to go back and teach them how to do it! Thanks again for the recommendations.

I wanted to let you know how much Dave and I enjoyed the Brunch class last Thursday.  Your setup and presentation allowed us to feel like we were involved in the preparation of each recipe, not only the ones we had hands on.  We also enjoyed being part of the group as a whole, rather than working on a single recipe in teams.  

We're registered for and looking forward to the Indian, Mediterranean, and Greek classes coming up in February and March.
