Thai Fried Pineapple
1 ripe pineapple
4 tablespoons butter
1/4 cup brown sugar
1/4 cup lime juice
1 cup vanilla yogurt
1 lime thinly sliced for garnish
1/2 cup coconut toasted for garnish
Peel pineapple and cut in half lengthwise. Remove core and cute each half in half crosswise. Slice each piece lengthwise in to 1" wedges and set aside. In a large frying pan melt butter, add pineapple and stir to coat. Increase heat and brown pineapple slices a little. Add sugar and lime juice and stir, coating pineapple with sauce as it caramelizes. Place a few slices of pineapple into an individual serving bowl. Top with a couple of tablespoons of yogurt. Garnish with a slice of lime and sprinkle with coconut. Serve warm.
Serves 6 to 8.
