Thai Roasted Coconut Cashews
2 cups roasted cashews salted
1 cup unsweetened coconut
2 tbsps peanut oil
1/3 cup honey
½ tsp chili flakes, more if you like it spicier
salt and pepper to taste
Mix ingredients together and spread onto a baking pan. Bake at 325 degrees. Stir mixture every 5 minutesuntil golden brown and evenly toasted. Cool and break up larger clumps.
Makes 2 ½ cups.
