Apple Pancakes
Apples:
2 large sweet-tart apples, peeled, cored, and thinly sliced
2 tablespoons butter
1 teaspoon cinnamon
Melt butter in a frying pan. Add apples and cinnamon. Sauté on medium heat until apples are slightly browned and softened. Add a little water to the pan while cooking if apples are dry. When apples are soft, remove from heat and cool.
Pancakes:
2 cups flour
2 tablespoons sugar
4 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
2 cups buttermilk
¼ cup butter melted
1 teaspoon vanilla
2 eggs
Place all dry ingredients in a large mixing bowl and mix together. Add all the wet ingredients and mix until blended. Stir in reserved sautéed apples. Cook pancakes on preheated greased griddle.
Serves 4.
