Hannah's Rotkohl
This recipe is from my friend Kirsten's mom Hannah, who was born in Germany.
2 ½ lbs red cabbage thinly sliced
3 tablespoons butter
1 onion diced
10 whole cloves
1 tablespoon soy sauce
2 tablespoons lemon juice
1 cup water, and more if needed
2 tart apples grated
1 teaspoon salt
Melt butter in a lidded sauté pan. Add onion and sauté until onion is soft. Add cabbage and cook for about 5 minutes, stirring to coat with butter. Add remaining ingredients. Bring to a simmer and cover. Cook for 1 to 1 ½ hours. Add water if needed. Remove cloves before serving.
Serves 6 to 8.
