Middle Eastern Chili
Make a pot of this simple and delicious chili and serve some warm pita bread on the side.
3 tablespoons olive oil
2 onions chopped
4 garlic cloves minced
1 green pepper diced
1 lb ground lamb or beef
3 teaspoons coriander
2 teaspoons cumin
1 ½ cups tomato sauce
1 cup beef broth
1 ½ cups lima beans (frozen)
1 15 oz can white beans (drained)
salt and pepper to taste
Garnish:
1/3 cup cilantro chopped
1 cup plain yogurt
2 cloves garlic minced
Heat oil in pan. Sauté onions and garlic until translucent. Add pepper, ground meat, coriander, and cumin. Cook until the meat is cooked. Add remaining ingredients and cook approximately 30 minutes. Add more liquid if needed and adjust seasoning.
For garnish: mix yogurt with garlic and a pinch of salt. Serve chili with the garlic yogurt and a sprinkle of cilantro, with warm pita bread on the side.
Serves 6.
