Basic Aebelskiver Batter

  • 1 ¼ cup flour

  • ½ tsp salt

  • 2 ¼ tsps baking powder

  • 2 tbsps sugar

  • ½ tsp cardamom

  • 1 egg

  • 1 cup milk

  • 2 tbsps butter melted

Whisk all dry ingredients together in a bowl. Mix egg, milk, and melted butter together in another bowl. Add wet ingredients to dry ingredients and whisk to blend. 

  • vegetable oil for cooking

  • powdered sugar for dusting

  • jam or apple sauce on the side

Heat seasoned aebelskiver pan over medium high heat. Brush each hole liberally with oil. You will need to adjust temperature depending on how fast the aebelskivers are cooking. Using a ladle, fill each hole almost to the top of the pan. When the first side is cooked use a bamboo skewer to pull it up on its side. Batter will fill hole. Turn again a quarter turn from the side. Continue cooking. Turn aebelskiver all the way over to cook the last side. When done use skewer to remove the aebelskivers from the pan. Place on a serving plate and keep warm in a 200º oven. Continue cooking until all aebelskivers are cooked. Dust with powdered sugar before serving. Serve with jam or apple sauce. 

Serves 3 to 4.
