Sweet and Spicy Nuts

  • 6 tablespoons butter

  • ½ cup brown sugar

  • ¼ cup water

  • 1 teaspoon Hatch or New Mexican chili powder

  • ½ teaspoon salt

  • 1 teaspoon cumin

  • 1 teaspoon dried oregano

  • ½ teaspoon black pepper

  • ¼ teaspoon cayenne pepper

  • 2 cups walnut halves

  • 2 cups pecan halves

  • 2 cups whole almonds

Pre-heat oven to 300º.  Grease a large sheet pan.  Melt butter in a large non-stick frying pan.  Add next 8 ingredients.  Cook, stirring until sugar dissolves.  Add nuts and stir to coat.  Remove from heat.  Spread mixture onto a prepared baking pan and spread into a single layer.  Bake, stirring every 5 minutes until nuts are glazed and brown- about 25 minutes.  Cool nuts completely on sheet pan, stirring occasionally.  Store in an airtight container.

These nuts are great to eat, or you can chop them up to use on salads, or even in waffles.

Makes 6 cups.
