Amazing Macaroni and Cheese

So what's exciting about mac and cheese?  This is the adult version.  Warning- it may make your kids give up Kraft! (well, maybe not...)

  • 1 lb penne past or elbow macaroni

  • 4 tablespoons butter

  • 1/3 cup flour

  • 3 1/2 cups milk

  • 2 cups sharp cheddar cheese

  • 2 cups Swiss cheese

  • 1/2 cup parmesan cheese

  • 1 teaspoon Tabasco sauce

  • salt and pepper to taste

Topping:

  • 1 1/2 cups panko (Japanese bread crumbs)

  • 2 tablespoons butter, melted

Cook pasta according to the package directions.  Set aside.  In a large saucepan melt 4 tablespoons butter.  Add flour and cook for a few minutes.  Add milk and cook, stirring constantly until mixture is thickened.  Reduce heat, add cheeses, Tabasco, and seasonings.  Thin sauce with additional milk if needed.  Remove from heat.
 
Stir sauce into pasta.  Pour mixture into a greased 9" x 13" casserole.  Stir 2 tablespoons of melted butter into panko.  Spread crumb mixture on top of pasta.  Bake at 350° for 30 to 45 minutes until bubbly and browned on top.
